Lately I've been eating less cereal in the morning and instead trying to get more protein in moi.
There are only so many variations of eggs this girl can take, so I am on to a new creation.
I call it my "super-healthy-super-speedy-to-make-muffin".
When Olive was visiting, she introduced us to a version of this recipe.
My first bite, I didn't love it, but then after a few bites I was hooked.
Easy, healthy, and full of protein.
And it only takes a few minutes to make.
It's mixed, cooked and steaming even before the water has boiled for T's cup of coffee.
Ingredients:
::1 egg
::about 2 heaping tablespoons ground flax seed meal
::1/2 banana
{Beat egg with fork in ramekin for at least 30 seconds}
{add 1/2 banana and mash together with egg}
{stir in flax meal}
{microwave for approx. 1 1/2 to 2 minutes}
I just touch the top and make sure it's set. If it is "wet" on top, put in for another 10 seconds until set. But try not to overcook.
{It will be quite hot, but just pop out of ramekin and cut into 4 triangles}

Also, raisins make for a fun little addition if one is feeling a little risky and adventurous in the wee hours of the am!
